Ok, this isn't so much a recipe as just a dinner idea. When it's hot like this, we love fried chicken salad at our house. Here's what you need:
Frozen breaded chicken tenders or popcorn chicken or chicken nuggets
Lettuce
Tomato
Onion
Cucumber
Broccoli
Carrots
Boiled eggs (about one per person)
Grated cheese
Ken's Steak House Honey Mustard dressing, topping and spread--don't be fooled by other honey mustard dressings. This is the really good one. No, they're not paying me to write this, but they should.
Put the chicken in the oven to cook and put the eggs on to boil. While all that's cooking, shred your lettuce and dice the other veggies. If you have older kids, put them to work on this. Don't think of it as slave labor, think of it as family togetherness or learning life skills or something great like that. Once the eggs are boiled, peel and dice them. Then serve it all up like a salad bar so everyone can have exactly the salad they like.
